The story dates back to the Middle East where Lucollo, a Roman General first collected the plant in order to transplant it into his own gardens in 65BC. The wild cherry plant, which is gathered in pots and dried in the sun, with its aroma and rich colour tells its history dating back over 2000 years.
THE PRODUCT
The fruit matures once a year in July in low quantities, it is left under the sun in a slow drying process lasting 40 days during which the cherries are immersed in their own deep, ruby juices. The fluid consistency still retains the integral presence of the fruit along with its intense perfume. The intense flavour of the matured fruit is revealed along with a hint of tannic astringent. It lends itself perfectly to the preparation of cocktails or mixed with fizzy or white wine and is ideal with desserts made with ricotta or cream pastries. The fruits are also extremely rich in Vitamin B and C.
The fruit offers a rich array of colours, perfectly designed to enrich the dishes of those with a creative flair in the kitchen who like to explore past traditions. The ethos of producers “Si.Gi”, is to bring back and appreciate the fruits previously used in Marche gastronomic traditions, stepping back to days gone by using traditional cooking methods which recapture the process for making home made jams which retain all the nutritional properties.
Si Gi produces the cherries organically, adhering to ISO certificate 9001, which respects the seasonal nature of the fruit. No thickening agents or preservatives are used, not even natural substances.
Both the consistency and density of the cherries are obtained through the various cooking methods, this involves a very low quantity per kg of the fruit thereby offering a quantity of vitamins and mineral salts for every 100g of the product, beyond comparison to other produce.
