Visner

With
sour black cherries, Visciole in Italian, a scented fortified wine called
“Visner” is made. It is a wine with medium alcoholic content
and is typical of northern Marche. It is flavoured with cherry notes, and
it leaves a slightly bitter aftertaste.
This is the reason why it is perfect to lighten strong savoury
dishes but it is also a delicious match with desserts. The production
technique is a very complex one. The first fundamental stage is the
seasoning of the ripe fruit with red wine, sugar and 90°alcohol. After
fermenting for some weeks then, wine is filtered to eliminate impurities
and it is then left to mature for six months. Once it is bottled it is
then ready to be enjoyed in small glasses that allow the evaporation of
the brushwood scents.
At
room temperature it can be drunk alone, or together with some dry biscuits.
It is suitable to enrich custard or to be enjoyed with strong taste
seasoned cheese such as pecorino. In this last case we advice to enjoy
“Visner” at cellar temperature, around 15C°.
