To prepare this fish soup (that will be enough for 6 to 8 persons) you need 1 big cuttlefish, 1 squid, 1 cod weighing 800 gms., 4 red mullets, 4 mantis shrimps and 300 gms. of razor-shells. After washing and emptying the whiting and the red mullets, slice them (remove heads and rails) and put them with the razor-shells in a pan. Separately in 300 gms. of olive-oil fry 1 onion, 3 cloves of garlic, 1 celery heart, 1 sprig of parsley, all finely chopped. When lightly fried, add the cuttlefish and the squid cut into small pieces and the mantis shrimps. Leave the fish to fry lightly, then let 1/2 glass of vinegar to evaporate in. Now add 70 gms. of tomato puree thinned with tepid water. Salt, pepper and pour 1 litre and a half of boiling water into the sauce. Allow it to cook on a high flame for 10 minutes, then pour this broth onto the fish and let cook on a low flame for 15 minutes more. Remove the pan from the flame and before serving the soup with toasted bread croutons rubbed over with garlic, leave it to rest with a lid on in a warm place for 1 hour. - Welcome to Ancona © Copyright 1999 Liberation Ventures Ltd. |
